I am always on the lookout for yummy recipes that I can transition into vegetarian easily! This one is even more amazing cuz its also 21 Day Fix approved! I'll be trying this tonight. Nom nom!
What You Need –
○ Package of either Beyond Meat Chicken Strips or Quorn Chicken Cutlets (non-breaded). You could even avoid the meat alternative altogether and just leave it out.
○ 1 cup container sun dried tomatoes chopped (buy the ones that come in the zipper pouch in the produce section, not the ones that are jarred in oil.)
○ 2 cups of fresh basil
○ 1 tsp EVOO
○ 8 ounces no sugar added tomato sauce
○ 1-3 cloves fresh garlic, minced
○ 1/2 tsp sea salt
○ If you like spicy, you can add 1/8 tsp red pepper flakes
○ 8 ounce dry penne noodles. I prefer to use quinoa Penne, but you could also use whole wheat/whole grain.
○ **OPTIONAL** shredded cheese to sprinkle on top of pasta when done
Instructions –
○ Defrost your chik'n (if purchased from frozen). Add to sprayed, non-stick pan and cook until warm.
○ Add 1 tsp of olive oil or coconut oil and stir into chicken
○ Blend the sun-dried tomatoes, garlic, sea salt, red pepper flakes , tomato sauce and basil in a food processor and blend until the tomatoes are finely chopped.
○ Transfer the mixture to pan with chicken
on low heat, stir mixture into chicken and let simmer ( stirring occasionally ) Add in a splash of water to loosen tomato mixture up
○ Boil pasta per package directions
○ Once pasta is cooked, drain and rinse
○ Add pasta to chicken mixture, stir and serve

1 Red 1/2 Green 1 Yellow
**If you want to make this non-vegetarian, simply use regular, boiled chicken breast in place of the meat alternative.**
