Vegetarian Brown Rice Buddha Bowl

I have just stumbled across the world of Buddha Bowls!! What the heck is a Buddha Bowl you might ask....

Buddha bowls, sometimes referred to as glory or hippie bowls, are hearty, filling dishes made of various greens, raw or roasted veggies, beans and a healthy grain like quinoa or brown rice. Sometimes they also include toppings like nuts, seeds and dressings for added texture and flavor.

So there you go.....that's a Buddha Bowl! It is really popular in the vegan world and I have been wanting to try them for weeks now. So this week I'll be sharing recipes each night for my different creations. First up is the Vegetarian Brown Rice Buddha Bowl. 

Vegetarian Brown Rice Buddha Bowl - turned out so good!


RECIPE:

Prep Time: 10 Minutes
Cook Time: 35 Minutes
Total Time: 45 Minutes

Ingredients:
FOR ROASTED VEGGIES-
1-2 Tablespoons of EVOO
1-2 Tablespoons Garlic
1 Large Sweet Potato
1/2 Medium Yellow Onion
~ 4 Cups of Broccoli Florest
Salt & Pepper, to taste
1 Teaspoon Italian Seasoning
FOR THE BOWLS-
1 Cup Brown Rice, cooked
1/4 cup Red Pepper Hummus
1/4 Cup Sprouts
1 Tablespoon Hemp Seeds (optional)

Directions:

1. Preheat oven to 375 (F) and line 1-2 cookie sheets with tin foil. Drizzle app. 1 tablespoon EVOO onto each pan. 
2. Prep veggies, by cutting into bite sized pieces. Then, spread onto pans, tossing in EVOO. Drizzle with more EVOO if you want.
3. Sprinkle on minced garlic, salt and pepper, and Italian Seasoning (all to taste)
4. Roast at 375 (F) for 30-35 minutes, or until sweet potatoes are tender enough to pierce with a fork. 
5.  While veggies are cooking, cook your brown rice and set it aside to be used in bowls once  ready to assemble.
6. Once everything is cooked, put 1 cup brown rice at the bottom of the bowl, and arrange the veggies, hummus, and sprouts on top. 
7. Serve immediately
